At the top of the Employee / Contractor view you will see a "Display" field with the number of rows listed:
This is a setting which users can modify based on their volume of Employees/Contractors AND their internet speed.
To change the default setting:
My Account | Edit
Change the "Default Table Display Amount" and hit Save
